Leek and Potato Soup (In A Soup Maker) (2)

Potato - look for potatoes that are firm and have smooth skin. Any white potato will work well. I used Maris Piper.

Leeks - you'll need two fresh leeks (look for leeks that are firm, with crisp, green leaves and a white stem), sliced thinly.

Onion - peeled and finely chopped.

Garlic - one clove, finely chopped.

Stock - vegetable stock made from a stock pot or stock cube.

Salt & Pepper - for seasoning.

Double Cream - adds richness and a smooth silky texture to the soup.

Top Tips

  • Before you start preparing your leek and potato soup, you need to ensure that your vegetables are clean and free of dirt. Begin by washing your leeks thoroughly under running water, making sure to remove any dirt or grit between the layers. Next, peel your potatoes using a vegetable peeler and rinse them under cold water.
  • Cut the vegetables into similar-sized pieces to ensure the soup is smooth and silky.
  • It is important to not exceed the maximum fill line of the soup maker as this can cause the soup to overflow during cooking.
  • If your soup maker has a sauté function, use it to cook the vegetables until they are soft. This step releases their natural sweetness, providing a depth of flavour to the soup.
  • Don’t forget to season your soup. Salt and pepper are essentials, but you can also consider adding herbs like thyme or a bay leaf for extra flavour.
  • Always taste your soup before serving. Adjust the seasoning or add a bit more liquid if needed. Sometimes a splash of cream or a squeeze of lemon juice can elevate the taste significantly.

🍴 Serving suggestions

Leek and potato soup can be enjoyed on its own or with a variety of toppings and garnishes. Here are some ideas to try:

  • Sprinkle chopped fresh chives over the soup for a mild onion flavour and a pop of colour.
  • Crispy bacon bits add a salty crunch to the creamy soup. Simply fry up some bacon until crispy, chop it into small pieces and sprinkle over the top.
  • A sprinkle of fresh parsley adds a bright, fresh flavour to the soup. Chop it finely and sprinkle over the top.

If you're looking to make it a more substantial meal, try pairing it with one of these accompaniments:

  • A slice of fresh crusty bread is the perfect accompaniment to this soup. It's great for dipping and soaking up all the delicious flavours.
  • A simple green salad with a light vinaigrette dressing is a refreshing contrast to the richness of the soup.
  • A classic ham and cheese sandwich or a simple air fryer cheese toastie are both great options to serve alongside the soup. They're easy to make and add some extra substance to the meal.

📖 Variations

Stir in a generous amount of grated Cheddar or Stilton cheese towards the end of the cooking process for a rich, cheesy flavour.

Add a kick to your soup with a pinch of cayenne pepper, a teaspoon of paprika, or even some diced chillies for those who enjoy a bit of heat.

Add a tablespoon of mild curry powder for an Indian-inspired version. The spices add a warm and aromatic dimension to the soup.

🥡 Storage

Store- Before storing, allow your soup to cool to room temperature. Transfer the cooled soup to an airtight container and store it in the fridge for up to 4 days.

Reheat- Microwave until piping hot, or reheat in a saucepan on the hob (stove).

Freeze- Transfer the cooled soup to a freezer-safe container and freeze for up to 3 months.

❓ Frequently asked questions

How can you enhance the flavour of leek and potato soup if it tastes bland?

To enhance the flavour of your leek and potato soup, you can add herbs and spices such as thyme, rosemary, bay leaves, or paprika. A dash of Worcestershire sauce or soy sauce can also add depth and umami flavour to the soup. Additionally, you can add a splash of lemon juice or vinegar to brighten the flavour.

Can I use any type of potato for leek and potato soup?

Starchy potatoes like Maris Piper or King Edward are ideal for leek and potato soup as they break down easily and create a creamy texture. Waxy potatoes can be used but may result in a less smooth soup.

Do I need to pre-cook the vegetables before putting them in the soup maker?

It’s not necessary to pre-cook the vegetables. However, sautéing the leeks beforehand, if your soup maker has a sauté function, can enhance the flavour.

How long does it take to cook leek and potato soup in a soup maker?

Cooking times can vary depending on the model of your soup maker, but typically it takes about 20-30 minutes.

Can I add other vegetables to the soup?

Certainly. Carrots, celery, or even cauliflower can be added for a different flavour.
